
Here is a recipe for Whoopsie Pies, a recipe me and My family love! Whoopsie pies are SO good!
They are the same as "Whoopie Pies" that are chocolate cookies filled with fluffy white frosting. (And we sometimes make Peanut butter frosting. Its wicked good!)
Maybe some of you have had this recipe before, but if you haven't, try it!
When I cook or bake, I take that time to pray, and it can be very refreshing. I encourage you to do the same.
Here are some prayer requests:
~Please pray for Mrs. Nikki M. She has had a surgery for the fourth time this week. She has been struggling with her health over the past few years, and she keeps getting infections that need surgery. Please keep her in prayer.
~Please continue to pray for Mrs. C, a lady in my town who recently lost her husband after a long illness. I went over to see her a few days ago, and she seemed to be doing well, and her family was taking good care of her. Please pray for her health also.
Whoopsie Pies~
* This recipe came from Bangor, Maine, and never was called whoopsie pies, but whoopsie....
Cream together:
1/2 cup of shortening
1 Cup of sugar
Add:
2 egg yolks beaten until light colored
Sift together in another bowl,
5 TBS. of Cocoa
2 cups of sifted flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
Add alternately creamed mixture with:
1 cup milk
1 teaspoon vanilla
Drop by teaspoon fulls onto ungreased cookie sheets. Bake at 375 degrees for 8 to 10 minutes, depending on the size you make.
Cool cookies and then put together with the following filling and wrap each separately in waxed paper.
Filling:
Cream together: 2 egg whites
1/2 cup of shortening 1/4 teaspoon salt
2 cups confectioners sugar 1 teaspoon vanilla
Beat egg whites until stiff. Fold in some of the confectioners sugar. Cream shortening. Ad remainder of sugar and add more if needed. Add salt and vanilla. Fold in beaten egg white.
